The French Yule Log Cake (Bûche de Noël)
The French Yule Log Cake - Bûche de Noël
Every year, Paris' best pâtissiers, chocolatiers, and luxury hotels unveil their unique interpretations of the classic yule log cake. Known as bûche de Noël, gateau de Noël, or gateau roulé, they’re no ordinary cakes rolled up and topped with frosting — these creations are each a true objet d'art (work of art). For instance, last year, Hôtel Lutetia made a yule log in the shape of a dog sleeping on a cushion! Each yule log showcases creativity and craftsmanship, blending innovative flavors and stunning designs that reflect the holiday spirit.
Let’s take a closer look at my 6 favorites from this year’s selection!

Le Lutetia
Pastry Chef Nicolas Guercio unveils the enchanting "Flocon" Yule Log. Named after a flocon de neige (snowflake), this six-pointed star-shaped masterpiece was inspired by the classic Mont-Blanc dessert. Featuring a chestnut biscuit, velvety chestnut cream, and tangy blackcurrant confit spiced with Timut pepper, it balances crunch, sweetness, and freshness. Topped with airy chestnut mousse, meringue, and white chocolate evoking fresh snow, it hides a magical surprise: a Christmas music box that plays a festive tune, bringing the sugar-crafted stars to life.

This exquisite creation combines a frosted vanilla and lemon zest base with a hemp and olive oil cookie, layered with burnt lemon and bergamot paste, raw milk cheesecake, and ribot milk mousse. Encased in a white chocolate and yogurt coating, its tart notes of Amalfi lemon and lemon caviar evoke the elegance and fragility of a crystal leaf.
